Cornbread Waffle Bites with Honey Butter Syrup
Ingredients:
For the Cornbread Waffle Bites:
- 1 cup cornbread mix
- 1/2 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup cooked and crumbled bacon (optional)
For the Honey Butter Syrup:
- 1/4 cup honey
- 2 tbsp unsalted butter
- 1 tbsp maple syrup (optional)
- Pinch of salt
Directions:
- Prepare the batter: In a bowl, whisk together cornbread mix, buttermilk, egg, and melted butter until smooth. Stir in cheddar cheese and bacon if using.
- Cook the waffles: Preheat a mini waffle maker and lightly grease with cooking spray. Spoon about 1 tablespoon of batter into each section and cook for 3-4 minutes until golden brown. Repeat with remaining batter.
- Make the syrup: In a small saucepan over low heat, combine honey, butter, maple syrup (if using), and salt. Stir until the butter melts and the mixture is smooth. Remove from heat.
- Serve: Arrange waffle bites on a platter and drizzle with warm honey butter syrup. Serve immediately.
